Originating in Campidano, fregola (or fregula) is a typical semolina and water-based Sardinian pasta. A simple product from popular tradition that is very widely used today. The production process is kept simple to offer the end consumer an artisanal product exactly the same as it was originally.
The Senatore Cappelli variety of flour which is purely Italian and relatively unknown. It has a long history which dates back to its cultivation in Puglia and Basilicata. Senatore Cappelli flour provides a valid and healthy fregola option with more vitamins, minerals, fats and amino acids than common wheat. This organic dry pasta is made using certified raw materials and production processes.

SHELF LIFE: Dry fregola can be stored for 36 months in a cool, dry place.
