The fruit in this classic Australian sparkling shiraz is a wonderful match for the sweet and spicy rojak sauce on Malaysia’s classic grilled tofu puffs. Take hawker food upmarket and let the fusion fun begin!

The classic wine match with duck is pinot noir and this easy-drinking version works a treat with the spices in our laksa too, especially if you give it a light chill (30 minutes in the fridge before serving should do it).

The big flavours in jazzy ribs call for full-flavoured grapes like cabernet sauvignon and shiraz. The Don Eduardo’s rich red fruit flavours of plum and black currant balance the black vinegar and soy sauce nicely, while the dark spices, pepper and caramel echo the sauce’s sweet earthy depths.

I love this slightly frizzante, grapey moscato with the sweet gula melaka syrup and creamy coconut milk. Sweet without being cloying, refreshing and only 5% alcohol, so have a second glass!
Tenuta Sant’Anna Prosecco Rose DOC ($29.99 – order here)
Only recently have the DOC guidelines for Prosecco, Italy’s most popular fizz, allowed producers to make rosé wines. A touch of pinot nero added to the white prosecco grapes gives a pink blush, and the crisp acid and soft bubbles beautifully cut through the oil in our deep-fried curry puffs.
