The original recipe for malloreddos (also known as Sardinian gnocchi) uses one of the finest and most popular organic flours: Khorasan wheat.
It is a high-quality organic grain which has significantly superior nutritional properties to wheat. It has a high protein value and a higher content of minerals such as calcium, iron, magnesium, phosphorous, zinc, sodium and potassium. We consider Khorasan wheat to be a particularly suitable flour to enhance the traditional characteristics of malloreddos and offer excellent nutritional benefits to the end consumers.

The flour is certified organic as is the artisan process certified for the processing of organic raw material. More easily digested than regular wheat grain, much like spelt, some people with wheat sensitivity can tolerate it, however it still contains gluten. It has a much higher nutritional value than wheat, characterised by high protein value and higher presence of minerals such as calcium, iron, magnesium, phosphorous, zinc, sodium and potassium.
