Malloreddos are undoubtedly the most popular Sardinian dish. With their characteristic lined shells they have brought a taste of Sardinia to all four corners of the globe. The malloreddos production involves bronze drawing and the use of purely Italian flour. Senatore Cappelli flour is not very well known but rich in beneficial properties and nutritional value which make it the perfect choice for the production of malloreddos.
Senatore Cappelli flour is an ingredient of the utmost quality and is a bearded wheat, that is it contains fibers typical of grasses. It is also a very hard wheat and this helps the pasta to remain al dente when cooked. From a nutritional point of view, it contains a higher quantity of vitamins, minerals, fats and amino acids than common wheat. This also ensures that it is more easily digested.
