PAOLO COTTINI Soave DOC
The palate of this wine is dry in the mouth with a good flavour and minerality. The bouquet has scents of banana, citrus (lemon and grapefruit) with white flowers. In appearance, it is golden yellow with greenish reflections typical of garganega.
About the producer:
The winery is a new “wine reality” but Paolo Cottini’s family has been linked to this passion for a long time; this is the third generation involved with Silvano, Paolo’s father, teaching his son the art of producing quality wine.
The winery is located in the heart of Valpolicella, in Castelrotto, a small medieval village in the municipality of San Pietro in Cariano, located at the top of a hill. The castle, which gives the name to the village, has been destroyed but its walls, remained at the highest point of the hill, are still the symbol of royal dignity and testimony of its military function.
The vineyards are located in two areas of the historic Valpolicella, in Negrar Valley, in Ca ‘del Gallo, at an altitude of about 580 mt. facing south-west, and Valgatara area, at an altitude of about 250 mt. facing south-east. This decisive differentiation in topography and altitude conditions lead to quality grapes with distinctive and unique characters which, combined in various proportions, give life to the wines.
